Basil, parsley and roasted almond pesto
This is not your ordinary pesto and is super delicious and versatile. Adding parsley and roasted almonds gives it another dimension that really is tasty. Try this gluten free and dairy free basil and parsley pesto as a side dish to any meal or on a fillet of salmon and then roast in the oven. It can also work wonders with a little drizzled over a soup for extra flavour.
Ingredients
- 2 cups fresh basil
- 1 cup fresh parsley
- ¼ cup roasted almonds
- 1 cup olive oil
- 2/3 teaspoons fresh ground pepper
- 1 teaspoon lemon zest
- 1 clove fresh garlic
Method
- Using a blender or food processor, place the roasted almonds in and blend until it is a loosely ground mix.
- Transfer into a small bowl and put to one side.
- Into the blender place the basil, parsley, olive oil, pepper, garlic and lemon zest, all in together. Blend for a couple of minutes to make sure that it is all smooth and mixed together. Have a taste to see if you would like to add any more pepper or garlic.
- Then place the loosely ground roasted almonds into the blender and blend for another minute or until the nuts have blended into the mixture but not too smooth.
- Taste to see if there is anything else you would like to add to it.
Inspiration
- This pesto can be served as a side to many dishes such as fish, meats and Chilli Prawns in Lettuce Cups
- It will transform a fillet of salmon spread it on the fillet and then roast in the oven.
- Lovely to have a little drizzled over a soup for an extra flavour: it is particularly good with Roast beetroot and fennel soup
