Fresh herbs, cucumber and chilli dip
Lovely summer dip that works with everything or even as a cold soup.

Ingredients
- 1 large cucumber continental or 4-6 Lebanese (peeled – optional)
- 2 bunches fresh basil
- 1 bunch flat leaf parsley
- 150 grams baby spinach
- 2 green chillies, deseeded and finely chopped
- 1 clove garlic, finely chopped
Method
- Place all ingredients into a food processor or blender and blend till well combined
- Store in an airtight container in the refrigerator for up to 4 days
Inspiration and top tips
- Lebanese cucumbers tend to be sweeter and work well with this recipe
- For a creamier version add tahini and/or nut butter
- Try adding fresh dill, coriander, sunflower seeds… the combinations are endless
