This tasty herb infused dressing can be used as a dip or accompaniment for crudities, burgers, chips, lamb and/or fish… in fact the list is endless for ways to use this super flavoursome dressing.

Ingredients
- 12-14 leaves fresh oregano
- 2 sprigs fresh thyme
- 5 large leaves fresh basil
- 1 or 2 cloves garlic, crushed or finely chopped
- 2 tablespoons olive oil
- 1 teaspoon lemon juice
Method
- Prepare the herbs by hand, chopping finely, then add them to the other ingredients, or if you are using a small blender/grinder, add all of the ingredients together and blend well.
- Store in an airtight container in the fridge.
Inspirations and top tips
- Try adding finely chopped chillies to spice it up a little
- Use other fresh herbs like, rosemary, mint or sage for different flavours
- You can add this to your pre-cooked homemade lamb burger mix, or pour over broccoli before roasting in the oven
