Oven baked salmon fillets with spinach
Baked with a combination of fresh spinach and a few humble spices, this mouth watering salmon recipe is certainly fit for a king. Simple gluten and dairy free home cooking at its best.

Ingredients
- 4 fillets Atlantic salmon (skin on middle pieces work best)
- 30 grams baby spinach, fresh
- 6 tablespoons olive oil, preferably extra virgin
- 1 teaspoon chilli flakes
- 1 teaspoon turmeric
- 1 teaspoon paprika
Method
- Pre heat oven to 180°.
- Select a baking tray that can accommodate all of the fillets.
- Pour 4 tablespoons of olive oil on to the baking tray.
- Place each fillet on the tray into the oil, skin side down.
- Move each fillet gently around the oil to ensure that the skin is well lubricated.
- Set each fillet straight on the tray.
- Using a sharp knife, score across each fillet into the flesh 4 times – not too deep but deep enough to fill with spinach leaves.
- Now take a few spinach leaves and dampen in the excess oil on the tray.
- Fill the spinach leaves into created cuts of the fillet.
- Combine the turmeric, paprika and chilli flakes in a bowl, and sprinkle along each fillet using as much or as little as you feel.
- Place the tray into the hot oven for twenty minutes or until cooked - the skin should be crispy and fillet cooked through.
