Honey Popcorn Cups

These honey popcorn treats are great as a children’s party food. Sweetened with honey they satisfy any sweet tooth and are a good alternative to sugar.

SERVES: 4-6 PREP TIME: 5 mins COOK TIME: 20 mins to freeze

Ingredients

  • ½ cup raw popcorn kernels
  • ¾ cup honey or agave syrup (can use both honey and agave or one or the other)
  • 5 tablespoons olive oil

Method

  1. Heat enough olive oil to cover the surface of a large pan and place on a medium heat.
  2. Add the popcorn kernels and stir until they start popping, then put a lid on the pan.
  3. When the popping dies down (but do not leave it too long or they will burn), take off the heat and put popcorn into a large bowl.
  4. Add agave/honey until all the popcorn is thoroughly sticky (¾ cup is a guide only and you may need more or less).
  5. Fill cupcake cases with the popcorn mix until they are full – use gloves to prevent your hands getting sticky.
  6. Place the popcorn cups onto a tray in the freezer for a minimum of 20 minutes to set.

To Serve

  • The Honey Popcorn Cups need to be kept cool or else the honey warms up and they start to separate.

Inspiration

  • Try mixing the following into the honey or agave
  • Orange/Grapefruit/Lemon/Lime rind pick one or try a combination
  • Fresh Vanilla powder
