Honey popcorn cups
These honey popcorn treats are great as a children’s party food. Sweetened with honey they satisfy any sweet tooth and are a good alternative to sugar.

Ingredients
- ½ cup raw popcorn kernels
- ¾ cup honey or agave syrup (can use both honey and agave or one or the other)
- 5 tablespoons olive oil
Method
- Heat enough olive oil to cover the surface of a large pan and place on a medium heat.
- Add the popcorn kernels and stir until they start popping, then put a lid on the pan.
- When the popping dies down (but do not leave it too long or they will burn), take off the heat and put popcorn into a large bowl.
- Add agave/honey until all the popcorn is thoroughly sticky (¾ cup is a guide only and you may need more or less).
- Fill cupcake cases with the popcorn mix until they are full – use gloves to prevent your hands getting sticky.
- Place the popcorn cups onto a tray in the freezer for a minimum of 20 minutes to set.
To Serve
- The Honey Popcorn Cups need to be kept cool or else the honey warms up and they start to separate.
Inspiration
- Try mixing the following into the honey or agave
- Orange/Grapefruit/Lemon/Lime rind pick one or try a combination
- Fresh Vanilla powder
