Caramelised okra, tomato and onion
Bursting with sweet Indian flavours this dish is a great accompaniment to any simple meat or fish dish and alongside a salad for a vegetarian option.

Ingredients
- 2 tablespoons olive oil
- 1 medium-sized red onion, finely sliced
- 175g okra, sliced diagonally with stalks removed
- 8 cherry tomatoes, quartered
- ½ teaspoon turmeric
- 1 teaspoon ground cumin
- ½ cup water
Method
- In a large frying pan, heat the olive oil, add the onion and fry gently until golden.
- Add the okra and let it soften for a few minutes.
- Then add the tomatoes and spices and stir together.
- Add the water and continue cooking until well combined and lightly sautéed. Or, if you like things a little caramelised, keep cooking until things get sticky!
Inspiration and top tips
- Adding cod or salmon to the pan at the same time as the okra makes a complete meal.
- Instead of okra you could use green beans, bok choy or courgettes/zucchini.
- Have fun with the flavours and ingredients… more or less tomatoes, adding garlic, different spices etc.
