Fiery lettuce cup turkey tacos

This is a great meal to share with family or friends – everyone will love getting involved in the making, setting up and eating of this tasty dish. The taco seasoning is super spicy and mega hot but can be toned down to suit your taste buds.

Ingredients

Taco seasoning

  • 4 tablespoons chilli powder
  • 1 tablespoon cumin powder
  • 1 tablespoon black pepper
  • 2 teaspoons paprika (smoked or other)
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon dried oregano
  • 1 teaspoon crushed red chili flakes

Filling

  • 1-2 tablespoons olive oil
  • 1 bunch spring onions, finely chopped
  • 3-4 cloves garlic, finely diced
  • 500g ground turkey
  • 1½ tablespoons taco seasoning (as above)
  • 60mls water or stock
  • 1 can black beans, drained and rinsed
  • 2 limes quartered (squeeze juice over tacos to reduce spiciness)
  • 3-4 baby gem lettuces, washed with leaves separated
  • Homemade or store-bought guacamole
  • Homemade or store-bought salsa

Method

  1. To make the taco seasoning, place the spices and dried herbs in a bowl, mix well and store any surplus in an airtight container for future use.
  2. In a pan, heat the olive oil and add the spring onions and garlic, cooking until soft.
  3. Add the turkey and 1½ tablespoons of the taco seasoning, cooking a little until the meat starts to brown, then add 50mls of the water or stock and simmer until the water is absorbed and the meat is cooked through.
  4. In a separate pan, warm the black beans through with the remaining 10mls of water and drain.
  5. Place the turkey mix, black beans, lettuce leaves (‘tacos’), guacamole and salsa into separate dishes on the table so everyone can make their own tacos.

Inspirations and top tips

  • Use any white fish in place of the turkey for an adaptation of this recipe.
  • For a vegetarian option, use vegetable strips instead of turkey ... zucchini, shallots, red peppers and carrots would all work well.
  • This recipe is simple to adjust if spicy is scary for you … just reduce/remove the chilli powder
