Spinach and flax meal flatbread
A quick and super simple gluten free flatbread or cracker recipe, which can also be used as an alternative base for falafels.

Ingredients
- 160g fresh spinach
- 200g flax meal
- 1 teaspoon ground cumin
- 1 teaspoon ground coriander
- 1 teaspoon ground turmeric
- 1 mild chilli, chopped
- 1 large clove garlic, chopped
- 2 tablespoons water
- 2 tablespoons of olive oil
Method
- Place all the ingredients in a food processor or blender and combine until the mix resem-bles a dough-like mixture.
- Take a large frying pan and preheat 1 tablespoon of olive oil.
- Take two generous scoops of the flax meal mix (depending on the size of round bread you would like) roll these into a round shape, flatten in the pan with the back of a large serving spoon and fry on medium heat for 5 minutes on each side or until golden.
- Serve warm and crisp.
- Store in an airtight container in a cool place, or in the refrigerator.
Inspirations and top tips
- You can add extra herbs and coriander; parsley or chives work well
- You can make crackers with this recipe, simply flatten smaller quantities and bake on greaseproof paper in the oven (140˚C) for 20 minutes
- To turn this into falafels, add spring onions, peppers, roughly chopped nuts, and roll into balls and fry in plenty of oil
