Sweet or Savoury almond cookies
With their light, fluffy texture, these cookies are a hit with all ages, making them ideal for any occasion and interestingly they work as a sweet or savoury.

Ingredients
- 2 cups almond meal
- 2 teaspoons gluten free baking powder
- 2 eggs
- ⅓ cup dairy free spread
Method
- Pre-heat the oven to 175°C.
- Place all of the ingredients in a food processor or a blender and blend until well combined.
- Using a dessert spoon, place a dollop of the mixture onto a greased baking tray, gently pressing down each one with the back of the spoon to form a cookie.
- Place in the oven for 15-20 minutes or until golden. To ensure even cooking, turn halfway through.
- Store in an airtight container for up to 2 days.
Inspiration and top tips
- Great for lunch boxes and picnics these cookies can be enjoyed on their own, alongside dessert or with a savoury dip… properly delicious served warm!
- If you prefer a sweet cookie add ¼ cup honey to the mixture
- Jazz up the savoury with a teaspoon of dried herbs, pepper and chilli
- Try adding either lemon or orange zest, dried fruits or crushed nuts for an alternative texture or taste
