This gluten free lamb cutlet marinade is packed full of spicy flavours and is a very simple, easy recipe that delivers an impressively delicious end result. If you are looking for a dinner party recipe it is sure to go down well.

Ingredients
- 4 cloves garlic, crushed
- ½ red onion, finely sliced
- 2 tablespoons dried coriander
- 2 tablespoons dried cumin
- 1 tablespoon dried chilli
- 1 tablespoon smoked paprika
- ground black pepper
- olive oil
- juice of 1 lemon
- 8 lamb cutlets, boned
Method
- Place all the ingredients, except for the lamb, in a bowl and mix them thoroughly.
- Using a meat mallet lightly tenderise the meat, then rub the marinade into the meat. Cover and keep in the fridge for at least an hour - the longer the better and overnight is brilliant.
- Pan fry for 8 minutes on each side or place on a baking tray for 25 minutes at 180°C – these cooking times can be varied depending on how you like your lamb to be cooked.
