Classic dairy free mayonnaise
Creamy homemade mayonnaise without vinegar but still with lots of flavour. You can get creative and add your own herbs or spices depending on what you are serving it with.

Ingredients
- 2 egg yolks
- 1 teaspoon lemon juice
- 1 cup olive oil
Method
- Place the egg yolks and lemon juice in a food processor or blender and blend until well combined, whilst blending begin to add the olive oil slowly a few teaspoons at a time, then as the mixture thickens you can add it a little faster.
- If the mixture becomes thicker than you would like you can add a little extra olive oil, or water, a teaspoon at a time.
- Store in the refrigerator in an airtight container for up to a week.
Inspirations
- You can add fresh or dried herbs to make variations of the mayonnaise, for example dill or tarragon even some black pepper and paprika.
- Go a little Asian and add some garlic, wasabi and lime
- Great one to use on a dairy free Caesar salad
