Gluten free crunchy fried fish
Delicious, crunchy low carb fish nuggets that are gluten free and super simple to make. Using a firm white fish cut into nice chunky pieces guarantees a moist rich protein snack for any meal of the day.
Ingredients
- 1.2kg firm, white fish (snapper, cod, pollack, haddock, cobbler)
- 250ml (1 cup) peanut oil (enough to cover the pieces of fish when in the pan)
Method
- Cut the fish into small strips approximately 5cmx2cm
- Pat the fish dry with a paper towel to remove any excess moisture.
- Prepare a plate with paper towel to drain cooked pieces of fish.
- Heat the peanut oil on high in an approximately 17cm saucepan until you see movement.
- Using tongs very gently place fish into the saucepan until the base of the pot is covered but the pieces are not touching.
- Cook for 2-3 minutes until the outside is golden brown.
- Remove the cooked pieces and place on a paper towel and continue until all pieces are cooked.
- Best eaten straight away, to enjoy the crunchy texture
Inspiration
Serve with Cucumber and coriander salad and a dip such as Basil, parsley and roasted almond pesto or Guacamole.
