Refreshing quinoa salad
Light, high in protein and quick and simple to make, this feast of a salad becomes a staple accompaniment or makes a great lunch on its own.

Ingredients
- 1 cup tri-colour quinoa (use plain if not available)
- 2 cups water
Salad base
- 1 packet sugar snap peas (approximately 150g)
- ¾ cup flat leaf parsley, finely chopped
- ½ cup basil, finely chopped
- 2 corn cobs, lightly cooked
- 500g baby cucumbers
- Olive oil
Salad topping
- ½ packet small red tomatoes, cut lengthwise into quarters
- ½ packet small yellow tomatoes (if available), cut lengthwise into quarters
- 1 avocado, diced
Method
Prepare the quinoa
- Place the quinoa in a sieve and wash thoroughly
- Add the quinoa and water to a saucepan and bring to the boil
- Once boiling, reduce the heat and simmer for approximately 10 minutes until the water has been absorbed
- Stir regularly until a light fluffy (not wet) quinoa remains
Prepare the corn
- Remove the husks from the corn
- Cook the corn cobs in boiling water until tender (this will only take a few minutes)
- When ready, rinse under cold water to cool the corn for cutting and dry off with paper towel
Prepare the salad mix
- Top and tail the sugar snap peas and cut into thin slices
- Add the sugar snap peas, chopped parsley and basil to a large bowl
- Slice the corn off the cobs and add to the bowl
- Cut the baby cucumbers lengthwise into four and then crosswise into small triangle shapes, add to the bowl
- Add the cooked quinoa to the salad
- Stir gently and add a generous serving of olive oil to taste
Finish the salad
- Transfer the salad and quinoa mix to a flat paella style serving bowl
- Top with the tomatoes and avocado
Inspiration and top tips
- Use whichever quinoa you like – white, red, black or tri-colour
- Change around the herbs and vegetables to suit your taste
- Keeps well in the fridge for two days
