Easiest gluten free prawn bites
These easy to prepare prawn bites are deliciously light and nourishing and can be enjoyed any time of the day. They work well alongside a gorgeous green salad, with your favourite pesto or dipping sauce. Perfect gluten free finger food for entertaining.
Ingredients
- 2 cups raw peeled prawns
- ½ cup fennel (sliced)
- ½ large red chilli (chopped and deseeded)
- 2 cups baby spinach (washed)
- ½ cup curly or flat leaf parsley (chopped – including some stems)
- ½ cup coriander (chopped – including some stems)
- 3 spring onions (shallots) chopped
- Black pepper to taste
- 2 tablespoons of olive oil for cooking
Method
- Prepare all ingredients and combine together in your food processor, pulsing a few times until the consistency is even. (Some texture is good in these bites so be aware not to over process the mix)
- Roll into little balls or press into small patties and lightly sauté in olive oil on medium heat for 6 – 7 minutes (or until golden brown).
Inspiration
- To spice things up a little add some cumin, paprika or turmeric to the recipe.
- For a light and delicious Asian inspired meal serve with Cucumber and coriander salad and Satay sauce light and delicious.
- They are also great as a snack or finger food when entertaining served alongside a bowl of Basil, parsley and roasted almond pesto
