- 500 grams salmon skinless fillet, cut into 3cm cubes
- 1 punnet of cherry tomatoes (optional)
- 8 x 25cm wooden skewers
Method
- Soak wooden skewers in water for 30 minutes before using, to stop them from burning.
- Prepare the marinade by blending (either in a food processor or with a hand held blender) the rosemary, olive oil, garlic, lemon zest, lemon juice and pepper until you have a smooth paste.
- Put the salmon and marinade into a bowl and mix carefully so the salmon is coated – put to one side.
- Oil the grill or bbq before turning on to a medium-high heat.
- Alternating the salmon and tomatoes, divide among eight 25cm skewers.
- Grill or bbq the skewers, carefully turning once, until the salmon is cooked through, 4 to 6 minutes in total.
- Delicious served hot or cold, these kebabs go particularly well with guacamole.
