Pan fried salmon bites

This is a lighter way to eat salmon, colourful and fresh with added spices, makes for a flavoursome and melt in the mouth appetiser that is not too spicy.

SERVES:  2 PREP TIME:  5 mins COOK TIME:  15 mins

Ingredients

  • 5 tablespoons olive oil
  • 1 teaspoon ground turmeric
  • 1 teaspoon ground cumin
  • 1 teaspoon freshly ground black pepper
  • 4 salmon fillets, skins on, sliced into 3-4cm pieces
  • 12 spring onions, sliced on the diagonal about ½cm thick

Method

  1. Heat the oil in a large frying pan over a medium heat.
  2. Add the turmeric, cumin and black pepper and allow to infuse for 1 minute.
  3. Place the salmon pieces skin up in the pan and cook for 5 minutes, until browning.
  4. Turn the salmon over so it is skin down and add the spring onions.
  5. Cook for a further 5 minutes until the skin is crispy.
  6. Serve the salmon with the spring onions on top.

Inspiration and top tips

  • Serve with an aioli dip as a canapé.
  • Great cold and works well for lunch boxes or picnics.
  • Keeping the skin on whilst cooking keeps the salmon moist… you can take the skins off at the end of cooking if you like and crisp them up to serve separately.
