Seaweed king prawn curry

A beautiful fragrant prawn curry that will warm you from the inside out. Succulent and full of flavour, this dish is culinary magic.

SERVES:  2 PREP TIME:  15 mins COOK TIME:  15 mins

Ingredients

  • 4 tablespoons olive oil
  • 2 cloves garlic, peeled and finely chopped
  • 4 spring onions, finely sliced
  • 2 fresh red chillies, deseeded and finely sliced
  • 2 stalks lemongrass, finely sliced
  • 2 teaspoons ground turmeric
  • 2 teaspoons ground cumin
  • 1 teaspoon garam masala
  • 1 teaspoon ground coriander
  • ½ teaspoon fresh ground black pepper
  • 50g seaweed spaghetti, soaked, rinsed and drained
  • 250g fresh spinach
  • 300g fresh king prawns, raw
  • 1 cup water
  • Juice of 1 lime
  • Fresh coriander leaves

Method

  1. Heat the oil in a saucepan over a medium heat.
  2. Add the garlic, spring onions, chilli and lemongrass and allow to infuse for 1 minute.
  3. Now add all the spices and black pepper to the pan and stir through for 3 minutes.
  4. Add the seaweed spaghetti and cook for a further 3-4 minutes.
  5. Add the spinach, prawns and water and cook for the final 4 minutes.
  6. Take the saucepan off the heat and squeeze in the lime juice.
  7. And finally, gently stir through the coriander leaves and serve.

Inspirations and top tips

  • An adaptable recipe where you can add more chilli or your favourite vegetables for variety
  • If you cannot get hold of seaweed spaghetti, simply omit and add more spinach
  • No worries if there are leftovers (but there won’t be!) because this is delicious cold on a bed of salad the next day
