Herby sea bass fillets

If you’re looking for a simple, tasty fish dish to prepare in no time, then here it is. A light, refreshing combination of herbs and spices that enhance the delicate flavours of the fish.

SERVES:  2 PREP TIME:  7 mins COOK TIME:  15 mins

Ingredients

  • 2 tablespoons chilli oil or any oil of your choice
  • 8 spring onions, sliced diagonally into approximately 1cm lengths
  • Stalks of one fennel head, chopped to match the size of the spring onions
  • 2 teaspoons dried mixed herbs and spices – dill, parsley, basil, sumac, chilli and black pepper
  • 2 sea bass fillets
  • 1 small handful fresh parsley, finely chopped

Method

  1. Gently heat the oil in a pan and add the spring onions and fennel.
  2. Lightly sauté until soft, stirring occasionally so they don’t stick to the base of the pan.
  3. Add the spice mix and stir through, coating the vegetables thoroughly.
  4. Now add the sea bass fillets skin down.
  5. Cook this side and then gently turn to cook the other side, adding a drop of hot water if needed.
  6. Add the parsley towards the end of cooking so that it is wilted.
  7. Serve hot on a bed of salad and/or with vegetables.

Inspiration

  • Add finely chopped fresh red chilli in place of dried chilli for a splash of colour
  • A squeeze of lime adds a little zing
  • Roast the fennel bulb (once you have removed the stalks) with some black pepper and oil to add to a salad alongside or for next day’s lunch!
