Herby sea bass fillets
If you’re looking for a simple, tasty fish dish to prepare in no time, then here it is. A light, refreshing combination of herbs and spices that enhance the delicate flavours of the fish.

Ingredients
- 2 tablespoons chilli oil or any oil of your choice
- 8 spring onions, sliced diagonally into approximately 1cm lengths
- Stalks of one fennel head, chopped to match the size of the spring onions
- 2 teaspoons dried mixed herbs and spices – dill, parsley, basil, sumac, chilli and black pepper
- 2 sea bass fillets
- 1 small handful fresh parsley, finely chopped
Method
- Gently heat the oil in a pan and add the spring onions and fennel.
- Lightly sauté until soft, stirring occasionally so they don’t stick to the base of the pan.
- Add the spice mix and stir through, coating the vegetables thoroughly.
- Now add the sea bass fillets skin down.
- Cook this side and then gently turn to cook the other side, adding a drop of hot water if needed.
- Add the parsley towards the end of cooking so that it is wilted.
- Serve hot on a bed of salad and/or with vegetables.
Inspiration
- Add finely chopped fresh red chilli in place of dried chilli for a splash of colour
- A squeeze of lime adds a little zing
- Roast the fennel bulb (once you have removed the stalks) with some black pepper and oil to add to a salad alongside or for next day’s lunch!
