Simple, light and nutritious, these crispy snow peas are great as a vegetable side or lunch box treat, with or without a dip.

Ingredients
- 1 tablespoon olive oil
- 500g snow peas
Method
- Heat the olive oil in a frying pan over a medium heat.
- Add the snow peas, leaving enough room for each one to lie flat.
- Once one side is crispy, turn and crisp the other side.
- For the snow peas to be their crispiest best, eat the same day.
Inspirations and top tips
- Replace snow peas with green beans or sugar snap peas
- You can use garlic or chilli oil instead of the olive oil.
