Fresh herb summer salad
This salad is sure to be a favourite at summer barbeques or shared lunches. It is super simple and not shy of flavours; fresh and crisp with a combination of yummy herbs that really make this salad something special.

Ingredients
Salad
- 3 cups mixed lettuce leaves
- 1 cup fresh basil and coriander
- 3 sprigs mint, leaves only
- 1 large fennel, finely sliced
- 2 lebanese cucumbers (or 1 continental), diced
- 1 avocado, cubed
Dressing
- 100 ml olive oil
- Juice of one lemon
- Black pepper to taste
- Chilli flakes (optional)
Method
- Gently wash the mixed lettuce leaves and herbs - remove any excess water.
- In a large bowl, mix lettuce, fennel and cucumber.
- Pick the basil, coriander and mint leaves from their stems and add to salad mix.
- Cut the avocado in half and remove stone. With a knife cube both halves of the avocado flesh, scoop out with a spoon and add to the bowl.
- In a separate smaller dish mix extra virgin olive oil with lemon juice and add black pepper and chilli flakes (if you fancy) to your desired taste.
- Once dressing is ready and just before serving, drizzle over salad mix and lightly toss. Your fresh summer salad is ready for you to enjoy.
