Almond and brazil nut balls
Highly nutritious, these tasty sweet nut balls are a treat for any occasion and they are free of refined sugar. They can be made as a batch and kept in the fridge for your visitors, if the family doesn’t find them first!

Ingredients
- 350g almonds, roasted
- 175g brazil nuts, roasted
- ½ cup tahini
- ¼ cup organic honey, runny
Method
- Preheat the oven to 150˚C and roast the nuts in separate trays for approximately 30 minutes, giving them a shake a couple of times for an even roast.
- Place the almonds in a food processor and process until fine.
- Put 100g of the ground almonds into a small bowl and the remaining into a large bowl.
- Add the brazil nuts to the food processor and process until fine.
- Now add the brazil nuts to the almonds in the large bowl and stir together.
- Pour the tahini and honey over the nuts and stir well to combine (if you have a large processor, you can use this to combine the ingredients).
- Place the mixture into the fridge for up to 30 minutes.
- Remove nut mixture from the fridge and form small balls (approximately 1 – 1¼ inches) in your hands and press together whilst rolling.
- Coat each ball evenly with the ground almonds you have put to one side.
- Place in the fridge in an airtight container to set for at least 30 minutes before serving.
Inspiration
- Mix it up with the nuts… you can use pretty much anything, swapping the brazils for cashews, hazelnuts, macadamias or pecans for example
- For different flavours, try adding a few drops of organic food grade essential oil, such as orange or peppermint
- You can buy already roasted salt free nuts if you need to have these on the table quickly!
