Gluten and dairy free broccoli pizza base

This is an unusual, surprisingly light and tasty pizza base; using a variety of healthy ingredients, this crispy edged base can be served straight from the oven with toppings of your choice. A fun, inventive way to introduce vegetables to children.

Ingredients

  • Olive oil spray
  • Approximately 400g of broccoli cut into florets
  • 1 medium red or white onion, diced
  • 1 garlic clove, chopped
  • 1 egg
  • 2-3 tablespoons psyllium husk (optional)
  • 2-3 tablespoons ground flaxseed meal
  • 2-3 tablespoons almond meal
  • 1 teaspoon gluten free baking powder
  • Ground black pepper
  • ½ teaspoon ground cumin
  • 1 teaspoon mixed spice
  • 2 tablespoons olive oil

Method

  1. Preheat the oven to 180˚C.
  2. Line 2 large or 3 small baking trays with baking paper and spray lightly with olive oil.
  3. Pulse the broccoli, onion and garlic in a food processor until it resembles a fine crumb.
  4. Add the egg, powders, spices and all other remaining ingredients to the broccoli mixture and pulse until combined.
  5. Split the mixture into three, roll into a ball shape and place each on a baking tray.
  6. Cover each ball with a piece of baking paper and using the palm of your hand spread the mounds into flat circles.
  7. Continue to spread the mixture with your hands or use a rolling pin to make a thin base (the thinner it is, the crispier it will be).
  8. Spray or brush the surface lightly with olive oil.
  9. Bake for 30/40 minutes until golden brown.
  10. Remove from the oven, add toppings and continue to cook for 5-10 minutes or place in freezer for later.

Inspiration and top tips

  • Add your favourite toppings: herby pesto, tomato paste, fresh tomato, spring onion, sweet corn, pepperoni slices, ham, prawns or tuna
  • Can use the base like a tortilla and dip it in guacamole, salsa or hummus
  • The combined dough ingredients will store in fridge for a couple of days
