Mint and lemongrass tea
A refreshing vitalising infusion that is so simple to make and a great alternative to our caffeine habit.

Ingredients
- 20 medium mint leaves
- 2 stalks of lemongrass
- 600mls boiling water
Method
- Slice the mint leaves in half to release the flavour.
- Trim and slice the lemongrass in half, lengthways and then finely diagonally.
- Place in a pot, add the boiling water and allow to infuse for a few minutes.
Inspiration and top tips
- Adjust amounts to taste; if you like a stronger mint flavoured cup, add more leaves
- Put cooled tea into ice cube trays and freeze. Use on a hot day in a glass of water
- Trying adding a wedge of lemon, or chilli flakes or peppercorns to spice it up
