Prawn and broccoli stir-fry
This simple and tasty stir-fry will inspire experienced cooks and complete beginners. The succulent sweetness of the prawns combined with the light crunch of the broccoli and the aromatic basil, work beautifully together for a delicious simple dish that can be prepared in minutes and enjoyed hot, warm or cold.
Ingredients
- 3 tablespoons olive oil, for frying
- 4 cloves garlic, finely chopped
- 1 medium-sized chilli, de-seeded and finely chopped
- 6 stalks spring onions, finely chopped
- 3 broccoli heads, cut into small florets
- 1 kilo green prawns, peeled and de-veined
- 1 bunch fresh basil, finely chopped
Method
- Gently heat the olive oil in a large pan or wok, add the garlic, chilli and spring onions and sauté for 2 or 3 minutes.
- Add the broccoli florets and sauté for a further 5 minutes. If needed, you can add a little more olive oil or a drop of hot water and cover with a lid.
- Toss through the green prawns and basil and sauté for another 5 minutes or until the prawns are cooked.
Inspiration
- Serve in bowls and get everyone using chopsticks
- For some different flavours, try adding some sliced fennel, chopped coriander or fresh spinach leaves
- Leftovers can be frozen or simply halve or third the ingredients for fewer people
