Silver beet and chilli stir fry
A spicy and earthy flavoursome and nutritious silver beet (chard) dish, stir fried with chilli and spring onions; a great accompaniment to any meal.

Ingredients
- 2 tablespoons olive oil
- 1 bunch spring onions, finely chopped
- 1 mild chilli, medium size, finely chopped
- 2 bunches fresh silver beet (chard), washed and finely chopped
Method
- Heat the oil in a frying pan on a medium heat and lightly sauté the spring onions and chilli.
- Add the silver beet (chard) and continue to sauté until cooked (lots of choice here as to how you like your silver beet cooked… al dente or soft).
- Serve immediately and keep any leftovers to add to a salad.
Inspirations and top tips
- For garlic lovers, add some sliced or finely chopped garlic with the spring onions and chilli
- Try a couple of splashes of toasted sesame oil if you fancy a little more Asian flavour.
- Squeeze a little lemon or lime juice on before serving
- This recipe works well as a stand alone dish with salad, topped off with some toasted nuts and/or seeds
