Incredible nutty carob bars with seeds and dry fruits
A fruit, seed and nut carob recipe that makes fantastic snack bars; an alternative to chocolate that is naturally dairy free and refined sugar free.

Ingredients
- 245 grams dairy free and sugar free carob flakes or buttons
- 180 grams dried sour cherries, raisins or cranberries, loosely chopped
- 1 cup roasted almonds, loosely chopped (or other nuts of choice)
- 1 cup sesame seeds, toasted – golden to well done
Method
- Place a medium sized pot on a low heat.
- Add the carob flakes or carob buttons and melt down stirring regularly (approximately 10 minutes).
- Once melted take off the heat and add the dried fruit, almonds and ⅔ of the cup of sesame seeds and mix through gently.
- Pour mixture into a baking tray lined with greaseproof paper and spread out evenly.
- Sprinkle the remainder of the sesame seeds over the top of the mixture.
- Place into the fridge and allow to set for 1 hour.
- Slice into pieces, keep in an airtight container and store in the fridge for up to 1 week.
